One Year Ago
Today makes one year ago we packed up our things in Nevada and moved back here. I truly can not believe it has been a year. I am amazed how fast it has gone by. The funny (well not really) thing is that we are packing up again and moving back into our house. We are trying to get moved into it this weekend, but not sure if it is going to happen. But we shall see. The kids are excited to be back where we use to live and in the house they "grew up" in. They are all charged up about being in their old rooms. I hope this is the last move for a while because it makes #5 in 2 years and to be honest, I am tired of moving.

FINALLY!!

Muffins
These muffins are so good. They are great warmed up also. I got the recipe from a friend and thought I would share with all of you. Enjoy!!
APPLESAUCE OATMEAL MUFFINS
1 cup old fashion rolled oats (not instant)
1 cup non-fat milk
1 cup whole wheat flour
½ cup brown sugar
1/2 cup unsweetened applesauce
2 egg whites
1 tsp. baking powder
½ tsp. baking soda
½ tsp. cinnamon
½ tsp. sugarRaisins or nuts (optional)
Soak the oats in milk for about one hour
Preheat oven to 400 degrees
Spray muffin pan with cooking spray
Combine the oat mixture with the applesauce and egg whites, mix until combinedIn a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Combine cinnamon and sugar and top each muffin with some of the mixture. Bake for 20-25 minutes or until done. Remove from pan and cool. These can be frozen and reheated in the microwave for a quick breakfast.

Ballet Recital
I finally was able to get Paeton into Ballet. She LOVED it. She had her recital a few weeks ago and did such a great job along with the other girls in her class. She is sad that she does not have lessons over the summer and is really excited to start up again. She was also so happy to have two friends in her class and I know that made a difference also. She was so nervous the night of her recital that she told me that if she stood still her legs would start to shake so she had to keep moving. She looked so beautiful that night also. What a doll and I am glad to call her my daughter.

Kindergarten Graduation
What a day!! I had such a hard time with the kids graduating from Kindergarten that the night before I started crying and did not stop for a day or two. Even now thinking about it makes me so sad. Don't get me wrong, I am happy for them and that they are SO EXCITED to be going into first grade. But I can't handle it because I loose all three of them at one time and I don't have any more little ones at home.
Graduation was so cute. They sang some songs and had speaking parts and they all did such a wonderful job. Their Teacher and Teachers Aide are such wonderful people and it just amazed me how they could handle the class with a smile on their faces all the time. I got to help in the classroom once a week and it really was so much fun. I am looking forward to doing that this next year and hope the kids enjoy having me come again.
I love them dearly.
P.S. The extra little girl in the picture is one of the classmates and she just wanted to be in the picture.

That had have been tagged and the anticipation is killing you, but I seriously can not think of 8 things about me. I had this problem last time I was tagged and it took me months to figure out something.
But here it goes.
1. I do NOT carry a purse. I can't not figure out what to put in a purse and have come to the conclusion that if it does not fit in a pocket, I don't need it. Crazy, I know!!
2. I love Sushi!! I can not get enough of it.
3. I love to sew, but I am not very good at it. But I try any way.
4. I would LOVE to go to Australia and go to the Sydney Opera House and see Phantom of the Opera performed there.
5. I love to fish, but refuse to fish any where but Alaska, where I grew up. Because when you fish there you don't have to fish ALL day and you still catch something.
6. I have only been away from the kids over night one time. Which was 4 years ago when Rod and I went on a Cruise for 7 days and I thought I was going to die from not seeing and being with the kids. But I survived and so did they.
7. I HATE being late for any thing. I would rather be 10-15 minutes early than a minute late. It drives me crazy because I do not like walking in and having every one stare at me.
8. My kids are in bed by 7:00p for bed and I go to bed at 9:30p and read for about 20-30 minutes.
I am not going to tag anyone, but if any one would like to say 8 things about themselves go for it.
